About both Giles's and Buffy's former personalities, it suddenly strikes me that both Xander and Willow would probably shocked to see either one of them act that way. I find it interesting as well that in the episode we see Ripper, neither of the other two Scoobies interact with him. Also, when Buffy talks about how she used to be shallow, she chooses Angel to talk too.
