I agree with your assessment of Willow in season five. Tara doesn't know how to broach the subject, and of course the first time she does Willow freaks out on her and changes the topic, and then Tara gets her brain sucked and is incredibly thankful to Willow and owes her everything and (one presumes) doesn't question her again over the summer. Anya sort of sees the dark aspects to Willow--accusing her of stealing, for example--but she doesn't know enough about human morality to be able to communicate what she sees to Xander or the others.
I agree too that Willow going nuts at the end of season five wouldn't have worked anywhere near as well. I think the story needs some opportunity to show us exactly how dependent Willow is on Tara, and while there are some elements in season five it's not as much as the opening eight of season six does to show the unhealthy aspects there.
and what do you do with a big gun in peacetime...?
